How often should I change my car's brake fluid?

Manufacturers recommend from 1 to 3 years. As an auto technician i certainly would not exceed 3. It is not how much you use the brakes, but the fact that the fluid absorbs moisture from the atmosphere that is pertinent. This affects braking performance and corrodes the internals, especially callipers and wheel cylinders, because the moisture content is highest at the lowest point. A few pounds spent on regular changes can therefore save hundreds. Worst of all total failure can occur with heavy use, because the moisture in the callipers and wheel cylinders can vaporise owing to the heat generated.

Since brake fluid is soo cheep. I'd reccoment draining and replacing that at the same time you replace front pads since 90% of the cars braking is done by the front regardless the drivetrain
ideally once a year but keep an eye on reservoir to see if it needs topping up

brake fluid is usually clear or a lite hint of yellow, and the reservoirs are usually a see thru plastic so when you start to notice the fluid is dark yellow its time to change it. if the fluid is dark brown its long over due.
Usually when i change brake pads, i check the condition of the fluid. Although you can change them anytime.
Every time you change your Brake pads and/or shoes. So around every 12000 miles. But make sure you check it at least once a month.
you don't need to change it , only to check (you or the engineer ,when you feel that the brakes are not working well) if the cup of brake fluid is empty , so you have to fill in some . it's easy and cheap enough to do it yourself , in a gas station better.
